I created this recipe myself—turned out pretty good, I think. I based it on a recipe for Pumpkin Cake recipe I created, based on a Vanilla Cake recipe I got off the Internet, then substituted with healthy ingredients.
¾ cup eggbeaters
2 cups Splenda sugar substitute
1 tsp Nutmeg
2 tsp Cinnamon
2 tsp. Vanilla
2 tsp. Vanilla
2/3 cup Canola Oil
1 cup skim milk
1 cup unsweetened applesauce
1 cup chopped pecans
1 cup golden raisons
3 cups whole wheat flour
1/2 cup almond flour
1/2 cup rolled oats
3 tsp baking powder
Mix eggs, Splenda, oil, nutmeg, vanilla and cinnamon. Stir in milk. Stir in applesauce, nuts and raisons. Stir in whole wheat flour, almond flour, oats and baking powder. When mixed, pour into a greased cake pan. Bake at 355 degrees for 65 minutes, or until a knife comes out clean. Allow to cool for ten minutes before cutting to serve.
